WHere is a home-style interpretation of a drink featured on a new cocktail list. This is a large-volume premix that is packed with the flavours of the festive period, rendering it excellent for hosting a holiday party. Save the extra syrup to use in brunch beverages, puddings, or to make more rounds of this cocktail.

Makes enough for 10 guests
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Place the listed items into a pan, bring to a gentle boil, stirring to dissolve. Then, take off the stove and let it to cool down fully. Transfer into an sealable bottle, close it keeping it in the fridge, where it will keep for around a month.
To make Batch Mix: Pour every liquid ingredients in a big jug, allow it to infuse for 60 minutes, then strain , ideally through muslin, so it's fully clarified.
To serve: Add 85ml of your batch mix into your stirring glass containing ice, and agitate gently for about 60 seconds to cool it down. Pour into an cold coupe glass or equivalent, top with some cranberries and finish using a quick spritz of mandarin oil above the glass.
